I have a Costco sized container of pre-cooked chicken chunks in my fridge that I need to use up. I was thinking of making a couple of lazy chicken pot pie casseroles and sticking one in the freezer, but I'm just not feeling it. What else can I make with pre-cooked chicken?

Double digit temperatures in October and I still made the casseroles... Cue all of the 'why did you make hot food on such a beautiful day complaints' but I've no idea how to make (or ever eaten, so that I have an idea what it's supposed to taste like) chicken chili or chicken tacos, so I went with tried and true

Off topic, but when I read Costco, I totally shuddered. We had Costco chicken noodle soup (from the deli - leftover chicken from the rotisseries) and omg, me & C got SO SICK. I gave my dog a piece of the chicken and even he was sick!
I need new dinner ideas like crazy, so I am stoked you started this thread. I like both Ronin & Kissy's ideas. What did you end up making?
I am on a pork taco kick. I could eat pork tacos every day of the week.

I'm looking forward to the cooler weather so I can use the crock pot! The pre cooked chicken would have made great chicken enchiladas. Ky, white chicken chili can be just like regular chili except use your chicken instead of beef (if you use beef). There's a recipe for white chicken chili that's also delicious, it uses white beans instead of kidneys and the sauce isn't as thick.

I made the casseroles afterall, it's something I know my family will eat and it's easy to make a second at the same time for the freezer.
Kissy, I use my crockpot all summer long so I can still have hot food without heating up the house. I don't make stews and stuff, but pulled bbq pork or philly chessesteak sandwiches make great summer food and are easy crockpot meals.

Oh yeah, I've done pulled pork in the summer. Last night I made chicken in the oven and OMG it heated up this house big time--it was my first time using it. It'll be great in winter, but summer I really need to consider getting a grill.

I hate using our bbq, and I usually try to have supper ready for when Colin gets home from work, so I've gotten really good at putting a full blown meal on the table without using my oven or stovetop at all. Though when it's really hot we frequently just have sandwiches haha
