Made this last night, and it was sooo good.
I eyeball everything, guys, so I'll try.
I orange bell pepper 1 red bell pepper 1 butternut squash 12 oz fresh sliced mushroom 1-2 cloves garlic 1 1/2 c. frozen peas 12 oz pasta of your choice 3 oz cream cheese 1 c. shredded fontina cheese Marinara sauce (I made mine, but probably a jar's worth of store bought). Olive oil
Okay, so seasoning is where I just sprinkle at will, but I used: Parsley Oregano Basil Rlsemary Onion powder Sea salt Pepper
Chop both bell peppers and dice garlic, saute with the mushrooms in some olive oil. When they reach desired tenderness, add cream cheese and spices. Peel (if you want to) butternut squash, and puree in blender.When cream cheese is melted in skillet add marinara, peas, and pureed squash. Cook till everything is nicely simmering.
Prepare pasta until it is just UNDER al dente. Spray a casserole dish with nonstick spray and pour pasta in. Cover with sauce, stir enough that all pasta is covered in sauce. Sprinkle fontina cheese over mixture, and bake at 350° for 20 mins.
Nom. For the record, squash in pasta sauce is a great thing. Always.

That sounds really good!
I cook the same way. I panic when people ask me for recipes. I'm usually mumbling, "Well, I can get you the original recipe, but there's not much chance it'll taste the same."
I see things like: "1/8 t garlic powder" in a recipe and say to myself "Why even bother? It's not like that tiny pinch will add to the flavor." And then I sprinkle garlic powder in until I feel like stopping.

Amara once asked me how I knew what spices to use in what.
Hmmmmmm. Take out a spice. Smell it. If it smells like how you want that food to taste, sprinkle it in. Taste food. Repeat as needed.
Measuring spoons are reserved for baking soda/powder at my house. That's it.
